Bacon-Wrapped Asparagus

Ingredients

4 slices bacon
4 asparagus, bottom third peeled, cut into thirds crosswise

Kosher salt and freshly ground black pepper
1 teaspoon vegetable oil

Equipment
Glass or Stainless Steel Lid

DIRECTIONS
  1. Wrap three asparagus pieces with a slice of bacon and secure with a toothpick. Repeat until you have four bundles.

  2. Preheat the pan over medium-high heat for about 90 seconds. Add in oil and swirl to coat evenly. Allow smoke to rise from the entire surface of the pan, then turn off heat.

  3. Once smoke clears, add the asparagus bundles into the pan, cover, and cook over low heat for about 3 minutes.

  4. Flip each bundle, then cook, covered, for another 2 minutes or until browned.

  5. Sprinkle salt and black pepper and serve.
