4 sprigs thyme
1 sprig rosemary
1 teaspoon (3 g) juniper berries
⅓ cup granulated sugar
200 ml water
Add the water and sugar to the pot, and bring to a boil over [MED] heat.
Turn off heat and stir until sugar has dissolved completely. Let rest for 10 minutes, then add the thyme, rosemary, and juniper berries. Cover, set to [WARM 175ºF], and simmer for 40 minutes.
Turn off heat and leave to steep overnight. Serve with ice and sparkling water.
