[WARM 175ºF] 40 min

Ingredients

5 g fresh leaves mint
5 g fresh leaves basil
⅔ cup cane sugar
½ lime, sliced
200 ml water

DIRECTIONS
  1. Add the water and sugar to the pot, and bring to a boil over [MED] heat.

  2. Turn off heat and stir until sugar has dissolved completely. Let rest for 10 minutes, then add the mint, basil, and lime. Cover, set to [WARM 175ºF], and simmer for 40 minutes.

  3. Turn off heat and leave to steep overnight. Serve with ice and sparkling water.
