Chamomile and Lemon Balm Cordial

Ingredients
- 2 tea bags chamomile tea
- 10 whole flowers German chamomile
- 5 g fresh leaves lemon balm
- 1 cup granulated sugar
- ⅛ whole vanilla bean, halved lengthwise
- ½ lemon, sliced
- 200 ml water
DIRECTIONS
Add the water and sugar to the pot. Scrape in seeds from vanilla bean and bring to a boil over [MED] heat.
Turn off heat and add tea bags. Stir until sugar has dissolved completely and let rest for 10 minutes. Add the chamomile flowers, lemon balm, and lemon slices. Cover, set to [WARM 175ºF], and simmer for 40 minutes.
Turn off heat and leave to steep overnight. Serve with ice and sparkling water.
