½ large head cauliflower, separated into small florets, sliced
½ clove garlic, peeled, crushed
2 teaspoons lemon juice
1 teaspoon kosher salt
⅓ teaspoon ground cumin
⅓ teaspoon ground coriander
2 tablespoons tahini
2 tablespoons olive oil
Kosher salt, to taste

Add 1 tablespoon of water to the pot and line the pot with a sheet of parchment paper. Place cauliflower in the pot, cover, and steam over low heat for 10 minutes. Turn off the heat and let it steam in the residual heat for an additional 5 minutes.
In a blender, combine the cauliflower, garlic, lemon juice, salt, and spices, and blend until the mixture breaks down into a rough paste. Then, add tahini and olive oil, and blend again until the mixture forms a finer paste. Season to taste with additional salt, and add more lemon juice if desired.
Transfer the mixture to a serving bowl, drizzle with olive oil, and garnish with cilantro and a sprinkle of chili powder. Serve alongside ciabatta or warm pita bread.
