3 apples, peeled, cored, cut into 8 wedges each
2 tablespoons mirin
2 tablespoons lemon juice
⅖ cup (80 g) granulated sugar

Add mirin, lemon juice, and sugar to the saucepan, followed by apple wedges. Place the drop lid directly on the apples and simmer over medium heat for about 3 minutes.
Once the mixture comes to a boil, occasionally remove the drop lid and gently turn the apples with a spatula. Continue simmering over medium heat for about 30 minutes.
When most of the liquid has evaporated and the apples are evenly caramelized, turn off the heat. Transfer to a serving dish and let cool slightly, then refrigerate for at least 3 hours until set. Serve with vanilla ice cream and top with cinnamon and roasted peanuts.
