Ingredients

1 cup assorted mushrooms (shimeji, shiitake, maitake, etc.), cut into bite-sized pieces
1 pinch kosher salt
Freshly ground black pepper
Italian parsley, finely chopped
2 teaspoons vegetable oil

DIRECTIONS
  1. Preheat the pan over medium-high heat for about 90 seconds. Add in oil and swirl to coat evenly.

  2. Allow smoke to rise from the entire surface of the pan, then add mushrooms. Stir-fry for about 2 minutes.

  3. Sprinkle salt, black pepper, and parsley. Lightly stir and serve.
