Handling the saucepan
Here are a few important things to keep in mind when using your Yukihira Saucepan:
- Use medium or low heat for best results; avoid high heat.
- Avoid using metal utensils for cooking
Heating tips
The Yukihira Saucepan’s exceptional heat conductivity allows you to cook delicious meals without the use of high heat. Combined with the heat retention properties of cast iron, high heat levels can potentially be overpowering to delicate ingredients. In fact, using low heat yields the best results even when searing proteins, because the saucepan distributes heat evenly and rapidly, even at lower temperatures.
Thoroughly preheat the saucepan before adding ingredients.
- Preheat over medium-high heat for about 90 seconds.
- Add oil and swirl to coat evenly.
- Let smoke rise from the saucepan’s entire surface.
- Adjust heat level and start cooking
Cooking with your Yukihira Saucepan
Steam-roast
The Yukihira’s cast iron body and Drop Lid create the ideal environment for steam-roasting. Paired with Instant Evaporation Technology, excess moisture instantly evaporates while concentrated juices recirculate within the compact space. The weighted lid applies gentle pressure to maintain a controlled steam flow—simultaneously steaming and roasting ingredients to lock in depth and rich flavor.
- Always cook with the Drop Lid on to maintain the ideal steam‑roast environment.
- Make sure the ingredients are not stacked and are in contact with the surface to achieve browning.
Deep-Fry
Unlike traditional aluminum Yukihiras, Vermicular’s Yukihira’s cast iron body offers exceptional heat retention, making it an ideal tool for deep-frying. Stable oil temperatures ensure your food comes out light, evenly golden, and deliciously crisp with every batch.
Allow the oil to reach ideal frying temperature before adding ingredients.
Rice Cooking
The Yukihira’s even heat distribution allows rice grains to cook uniformly, staying distinct and tender. The dedicated Yukihira Saucepan Lid supports the resting stage, helping steam settle for a fluffy, aromatic finish.
- Allow rice to rest 5 minutes off heat for best texture.

Cleaning your Yukihira Saucepan
Always clean with mild dish soap and a soft sponge. Never scrub with force or with abrasive cleaners to avoid damaging the enamel coating.
Soaking the handle for extended periods may damage the wood handle. Wipe wet spots with a dry cloth immediately after washing.
