Traditionally crafted from lightweight aluminum with a hammered interior, it’s appreciated for its responsiveness and ease of use for everyday cooking. But aluminum has limitations: it’s reactive with acidic ingredients, prone to temperature instability, and unable to support techniques like deep-frying, browning, or searing. Vermicular reimagines the Yukihira in enameled cast iron—freeing the form from its constraints and opening new possibilities for flavor and technique.
Vermicular’s Yukihira Saucepan redefines what this iconic form can be. The cast iron body’s heat retention keeps temperatures steady, enabling techniques such as deep‑frying, while the non‑reactive enamel surface lets you cook freely with acidic ingredients. Paired with Instant Evaporation, these qualities unlock methods rarely possible in a traditional Yukihira—clean searing, steam-roasting, and even deep-frying—expanding the pan’s repertoire into a truly versatile cooking tool for expressive cooking.
Designed exclusively for the Yukihira Saucepan, the enameled cast iron Drop Lid rests directly over the ingredients to create a compact cooking environment that recirculates natural moisture, improves heat efficiency, and prevents delicate foods from shifting or breaking apart. Traditionally crafted from wood, drop lids absorb liquid and flavor over time—but Vermicular’s enameled cast iron surface remains completely non‑absorbent, allowing flavors to deepen and concentrate even with minimal liquid. Paired together, the Yukihira and Drop Lid expand the capabilities of this classic Japanese form far beyond tradition.
The Yukihira’s precision‑cast hammered pattern increases surface area, allowing heat to transfer more efficiently and evenly across the saucepan. As liquids warm, the pattern and rounded interior edges guides them to flow and circulate naturally, promoting even temperature distribution throughout the saucepan. This thoughtful geometry enhances thermal efficiency and supports the delicate simmering techniques the Yukihira is known for.
Vermicular’s proprietary hydrophilic enamel finish, paired with thermally efficient cast iron, instantly evaporates excess surface moisture from ingredients. This unlocks cooking techniques rarely associated with a traditional Yukihira—most notably clean, confident searing and browning. When paired with the Drop Lid, moisture evaporates more efficiently while flavors circulate and condense, resulting in broths that are richer and more deeply concentrated. The entire Vermicular collection is designed, manufactured, and hand‑assembled at our foundry in Nagoya, Japan. Each piece is produced through a three‑part process—casting, machining, and enameling—by our master craftspeople, who draw on over 90 years of cast iron expertise to ensure exceptional fit and finish.
